An MBA, even more than most other degrees, is usually one that people get in order to advance their careers. Consider your options carefully. If at all possible, try to attend a program that is accredited by the AACSB. That's a type of professional accreditation that is a mark of high quality.
If it is impossible for you to go to another school – even another online school that's hooked to a more reputable "brick and mortar" university – in other words, if U Phoenix is your only practical choice, then consider them. But don't expect an MBA from there to jump-start your career like a degree from a uni with a better rep would. In fact, to be brutally honest, my past employers would get U of P MBA resumes and toss them. They would not be considered. Thus, I warn you. If you have the opportunity to attend a university with a better rep, then do so.

You don't provide enough information here really. Much depends on your field of study and exactly what schools you're talking about. If you're talking about this list above then I suspect they have incredible value and utility. If you're talking about UPhoenix or DeVry or Strayer then probably less utility.
If you're asking whether a master's from East Podunk State online is worth less than the same degree done in the classroom — they're the same, nobody cares either way at that level.
Would you hire an applicant with a master's from Stanford (online) or from East Podunk State (classroom)? That's where the difference comes in – when comparing wine grapes to pie apples. When comparing apples and oranges, it just doesn't matter all that much.
There is a way to get a regionally accredited associates degree in liberal arts in a year, but it will be a lot of work. From there, you will be able to enroll in a regionally accredited online bachelors program from a state school.
Go to one of the following three schools and get their catalog and degree requirements for an AA degree in liberal arts.

Being a special education teacher is time consuming and draining – if you are not willing to put forth the effort into a degree, is this the right choice for you? My teacher hours are 7:10 – 2:45, however I actually work from 6:45 to 5:00 and I bring work home at nights and on the weekends. I also have to take continuing education classes and mandatory training classes over the summer. I love what I do, but the turn over in special education is substantial.
If you truly want to do this, then I would suggest that you stay away from "online" institutions. You will have to do student teaching at some point and obviously this can't be done online. Also, you have to attend a school that is accredited by the CA Department of Education – not just any old school.
You will also have to become highly qualified (I'm sure you've heard of No Child Left Behind) in a subject area (in this case elementary education) and you will also have to take a similar test for special education http://www.ctc.ca.gov/credentials/requirements.html
If your first degree is a bachelors (and it is not too old), you will already have earned some of the basic credits (English 101, etc.). In my school district, we have several programs that offer those with a bachelors degree in "whatever" a fast track into a masters degree program (usually in about 18 months) for high needs areas (i.e. special education, science, math).
As far as what to pick, "art" is being cut across the country as is music and PE. If you are considering special education, I would suggest backing it up with elementary education certification as well (you'll have more options) than if you select pre-school.

While several such programs (see Columbia, e.g.) offer individual courses online, I don't think that any currently offer degrees that way. Furthermore, if you could find a program that would do this, the entrance requirements would have to be the same as those of the traditional university to avoid diluting the school's reputation, so unless you have a near-perfect high school GPA and SAT score, you wouldn't be able to get in.
I can sympathize, however, with your concerns with the U. of P. There may very well be a middle ground out there – a recognized, but not elite, school, that does offer such a program online. You might want to look at some of the state universities in more remote locations, which have used online programs as a way of maintaining enrollments despite less than perfect physical locations.

If you want to be a professor, the best move would probably be to start working on your Ph.D. You could have 20 MA's but you still won't get on a tenure track without a Ph.D. At least, you won't at any school worth being at.
The MBA will give you a nice income boost, but won't help your aspirations for becoming a proefessor.

It depends on what you are getting the degree in and what work you want to do when you graduate. Many MBA and some IT degrees are available online and they are gaining acceptance. There are some psych degrees online, but personally, having taken a couple of online courses, I don't think you can get the well-rounded experience you really need in that field. There are some degrees where experience under a mentor that you meet with regularly is absolutely priceless.
That said, if the only way you can get a graduate degree is online it can be done. Be VERY CAREFUL to select a school that is accredited by one of the Regional Accrediting organizations if you're getting a US degree. There are some universities that say they are accredited, but their accreditations mean something different- basically they mean nothing to people in business or academia. You won't be able to get into a PhD program with one of those degrees (Unless it is also accredited in some weird way) and many places won't consider it a real degree.
Most of all watch out for the fake colleges that basically offer a piece of paper saying you have a degree for a fee.
